目的:利用现代技术直观、量化表征肉苁蓉的润制过程,为肉苁蓉润制关键技术参数的确定提供依据。方法:构建肉苁蓉吸水和膨胀动力学曲线并进行非线性拟合,研究肉苁蓉润制动力学特征;采用低场核磁共振及其成像技术(LF-NMR/MRI)和物性分析技术,分别研究肉苁蓉润制过程的水分相态及其分布状态变化、物性特性变化;采用高效液相色谱法(HPLC)分析肉苁蓉不同润制时间指标成分含量变化。结果:肉苁蓉润制的吸水和膨胀过程符合一级动力学方程。LF-NMR/MRI结果显示随着润制时间的延长,水分逐渐由外周向内部渗入,结合水比例逐渐减少,自由水比例逐渐增多。随着润制时间的增加,各物性指标逐渐下降。润制36 h内,肉苁蓉浸出物有下降趋势,指标成分含量未发生明显变化。结论:动力学结合LF-NMR/MRI和质构仪分析技术可直观量化表征肉苁蓉的润制过程,为阐明肉苁蓉润制传统经验的科学内涵提供了科学依据。 |

The moistening process of Cistanches Herba was characterized intuitively and quantitatively by modern technology to provide a basis for determining the key technical parameters in the processing of Cistanches Herba.Methods:The kinetic curves for water absorption and expansion of Cistanches Herba were constructed and non-linearly fitted to study the kinetic characteristics of the moistening process of Cistanches Herba.Low-field nuclear magnetic resonance and magnetic resonance imaging(LF-NMR/MRI) and physical property analysis techniques were used to study the changes of water phase,distribution and physical properties during the moistening process of Cistanches Herba.High-performance liquid chromatography(HPLC) was used to analyze the changes in the content of index components of Cistanches Herba at different moistening times.Results:The process of water absorption and expansion during the processing of Cistanches Herba conforms to the first-order kinetic equation.LF-NMR/MRI results showed that with the extension of moistening time,water gradually infiltrated from the periphery to the interior,the proportion of bound water gradually decreased,and the proportion of free water gradually increased.With the increase of moistening time,the values of various physical properties decreased gradually.Within 36 h of moistening,the extract of Cistanches Herba showed a downward trend,and the content of index components did not change significantly.Conclusion:Dynamics combined with LF-NMR/MRI and texture analyzer analysis technologies can intuitively and quantitatively characterize the moistening process of Cistanches Herba,which provides a scientific basis for elucidating the scientific connotation of the traditional moistening experience of Cistanches Herba. |
